The Classic BelliniA favourite cocktail of Ernest Hemingway and Orson Welles, the Bellini was created by Giuseppe Cipriani in Harry’s Bar, Venice, in 1948.In the book, Harry’s Bar: The Life and Times of the Legendary Venice Landmark, by Arrigo Cipriani (son of Harry’s Bar founder Giuseppe ), the author writes: “My father was … inspired by a painter. The 15th century Venetian painter Giovanni Bellini was often mentioned at home. Stir well, allow the froth to subside, then top up with the prosecco. Do not under any circumstances put a slice of peach on the glass.
